London: parishioners publish vegetarian recipe book

Looking for inspiration for what to cook on meat-free Fridays? Parishioners at Our Lady Help of Christians in Kentish Town, north London, have come up with dozens of delicious ideas. Their Vegetarian Recipe Book includes soups, starters, main courses and sweets  from Ireland, Scotland, Poland, Spain, France, Greece, Iraq and more.

All the recipes were written and tested by the authors. The book is being sold for one pound. All the proceeds will go to New Ways - a charity which supports the St Paul's Missionary Community in Turkana, North West Kenya, where there is a very serious drought.

Fr Albert Salvans, a Westminster priest who used to work at Our Lady Help of Christians is based at the mission.  He reports that they are helping to feed up to 10,000 refugees  each day.

One of the recipe writers, Bernardine Bishop, from the parish Climate Justice Group, said: "We were wondering how we could help the community in Turkana who are suffering from the effects of climate change. Then it occurred to us that a vegetarian diet is better for the environment than eating meat - and it fits in nicely with the Bishops' advice to identify Fridays with Jesus in his suffering and death by some form of fasting and abstinence."

Parish secretary Lyndsey Stiling, who worked hard to compile the recipes, said: "I've really enjoyed doing this. I love cooking and I'm looking forward to trying out the recipes. This little book would  make a nice stocking filler this Christmas."
